Doctor Turvy's Quixotic Apothecary: Tomato Water Bloody Mary

Rx: Restaurant Eve's Tomato Water Bloody Mary

A few weeks ago I was tootling around Alexandria and I wanted a bite to eat. So I messaged the coolest fellow I know (and when I say coolest I mean that he just so happens to be photographing the Crillon Ball next month) and he sent me to Restaurant Eve. The recipe that follows is one that absolutely: Swept. Me. Off. My. Feet.

5 lbs Fresh Vine-On Tomatoes
1 Stalk of Lemon Grass
2 Serrano Chiles
1 Small Bermuda Onion
Salt to Taste
Cheese Cloth
(They use a table cloth)

In several batches, puree tomatoes, onions & chiles in a food processor.

Transfer pulp to cloth & suspend over stock pot. Leave to strain until pulp volume has reduced by 2/3, about 12 to 24 hours.

Over medium heat, simmer Tomato Water & Lemon Grass, gently for 10 minutes. Remove pot from heat and allow flavors to infuse for one hour. Season with salt & pepper.
Chill for two hours.

Fill a collins glass with fabulous ice and an ounce or two of vodka. Add Tomato Water and shake. Garnish with flowering Basil.
